Ingredients Serving: 6

  1. Ginger chopped - 1/3 cup
  2. Oil - 1 tbsp
  3. Mustard Seeds - 1/2 tsp
  4. Urad dal - 2 tbsp
  5. Red chillies - 2
  6. Tamarind - small pea sized ball
  7. Salt as needed
  8. Curry leaves - 2 sprigs

Instructions

  1. Wash the ginger well and scrape off the skin. Cut it into small pieces.
  2. Heat 2 tsp of oil, fry the ginger pieces for 5-6 minutes on a medium flame. Remove it from the pan.
  3. Heat another tsp of oil, add mustard seeds, when it splutters, add urad dal, red chillies and curry leaves. Saute until the dal turns golden brown in colour. Leave it to cool.
  4. Grind the dal along with ginger, salt and tamarind to form a coarse paste. Do not add too much water.
  5. You can mix this thuvaiyal with hot steamed rice and top it with a teaspoon of sesame seed oil or ghee. It tastes awesome.
