Ingredients Serving: 10

  1. 2 big peices of ginger finely chopped
  2. 2 Green chillies finely chopped
  3. 1 small lemon sized ball of tamarind soaked in 1 cup water.
  4. 3 tbsp jaggery grated
  5. 1/4 tsp chili powder
  6. 1/4 tsp turmeric powder
  7. 1 tbsp Coconut oil
  8. 1/2 tsp mustard seeds
  9. 1 pinch fenugreek seeds
  10. few curry leaves
  11. Salt according to taste

Instructions

  1. Heat oil in a deep skillet and add in mustard seeds and fenugreek seeds.
  2. Once they start to crackle add in chopped ginger, chilies and curry leaves and fry till raw smell goes off.
  3. Once raw smell goes off add in salt,chili powder and turmeric powder and saute well.
  4. Next add in tamarind extract and boil for 5 mins.
  5. After 5 mins add in jaggery and let it boil further for 10 mins or till the mixture looks slightly thick.
  6. Store in glass vessel once cooled and serve it with sambaar and rice as accompliment.
