New and healthy version of kaju katli

Ingredients Serving: 6

  1. For kaju katli :
  2. 110 gm cashew powder
  3. 15 gm oats flour
  4. A pinch of saffron
  5. Few drops of saffron colour
  6. 2-3 drops of rose essence
  7. 50 gm water
  8. 75 gm sugar
  9. For stuffing:
  10. 1/4 cup water
  11. 30 gm desiccated coconut
  12. 80 gm crushed paneer
  13. 3 tbsp milk powder
  14. 1 tbsp cashew powder
  15. 1 1/2 tbsp Oat flour
  16. 1 tbsp sugar
  17. 25 gm melted white chocolate

Instructions

  1. For stuffing: Heat water in a pan, add coconut and paneer, cook for 2-3 minutes. Add milk powder, cashew and oats powder, mix well. Now add sugar, chocolate and mix well. It will be a semi soft dough. Keep aside to cool.
  2. For kaju katli, heat a pan, add water, sugar and let it boil till the two thread consistency.
  3. Turn off the flame and add soaked saffron and colour, now add the oats and cashew pwd, mix vigorously till you get the dough like consistency.
  4. Grease your hands and the rolling pin for easier rolling. Place the dough on a sheet of wax/ butter paper and roll out to the desired thickness. Cut the rolled out dough into circles with the cookie cutter or into your desired shape.
  5. While it is still warm, gently shape each circle in to half moon. Spoon in some of the filling.
  6. Garnish with silver leaves and strawberry.
  7. Serve with the bowl of thickened milk (rabri).
