Ingredients Serving: 2

  1. 2 cup Basamati Rice
  2. 4 cup coconut milk
  3. 1 cup carrot diced
  4. 1/2 cup green fresh peas
  5. 1/2 cup pomegranate pearls
  6. 1 medium size onion sliced
  7. 2 green chilli slitted
  8. 2 tbsp chopped coriander leaves
  9. 1 tbsp Cumin seeds
  10. 1 tsp Fennel seeds
  11. 1/4 tsp turmeric powder
  12. 1/2 tsp Kashmiri red chilli powder
  13. 1 tsp Ginger garlic paste
  14. Salt to taste
  15. 2 tbsp Desi ghee
  16. 1 bay leaf
  17. 2 green cardamom
  18. 1 inch cinnamon stick
  19. 4 cloves
  20. 4 black pepper
  21. 2 tbsp cashew nuts chopped
  22. 2 tbsp Raisins
  23. 2 tbsp almond chopped
  24. 2 tbsp pistachios chopped
  25. 1 inch Ginger sliced
  26. Kesar few ( soaked in 1 tbsp milk)

  28. Rose essence (optional)

Instructions

  1. Firstly take the pan add ghee and roast the all dry fruits till they colour changes. Keep aside
  2. In the same pan add Diced carrot and peas stir fry until half cooked and keep aside.
  3. After the same pan add sliced onion fry till they translucent in golden brown colour and keep aside.
  4. Now In the pan add all masala ingredients like cardamom, cinnamon, bay leaf, cumin and fennel seeds, green chilli, Ginger garlic paste, sliced ginger saute well.
  5. Next add soaked Basamati Rice , turmeric powder and chilli powder give a good mix on low flame.
  6. Further add coconut milk salt to taste then mix well and close the lid. Cook it up to 5 mins .
  7. After 5 mins check it and gently mix well. Then add fried veggies, dry fruits, Onion mix well.
  8. Lastly add chopped coriander leaves chopped diced apple, and pomegranate pearls. Kesar milk mixture on it.
  9. Finally rich flavour healthy Kashmiri pulav is ready to serve.
