ABOUT Potato Stuffed Pav (baked vada pav) RECIPE

This is a healthier version of the the famous indian snack i.e vada pav. Same recipe can be followed to make pav but without stuffing.

Ingredients Serving: 3

  1. For the covering(pav. ):---
  2. 3 cups all purpose flour
  3. 1tbsp Active dry yeast
  4. 1 tsp sugar
  5. 3/4 cup luke warm water or milk
  6. 1 tsp Salt
  7. 2 tsp milk powder
  8. 2 tbsp Oil
  9. 2 -3tbsp milk
  10. For the stuffing:----
  11. 3 potatoes(boiled and cut into small pieces)
  12. 2 onions ( chopped)
  13. 3 tbsp oil
  14. 1 tsp mustard seeds
  15. 2tsp cumin seeds
  16. few curry leaves
  17. 1 tbsp ginger- garlic paste
  18. 1/2 tsp asafoetida
  19. 1 tsp turmeric powder
  20. 2 tsp coriander powder
  21. 1 tsp finely chopped green chillies
  22. 1/2 tsp mango powder
  23. Salt to taste
  24. 2 tbsp chopped coriander
  25. For garnishing
  26. 1 tbsp sesame seeds
  27. 1 TBSP KASURI METHI
  28. 1 tbsp ghee/ butter

Instructions

  1. Take 3/4 cup lukewarm water.Add 1 Tsp sugar and 1 Tbsp active dry yeast.Stir it and cover.Keep it for activating for about 10-15 minutes.It will froath as shown
  2. In a mixing bowl take 3 cups all purpose flour.
  3. Add yeast mixture.
  4. Add 1 tsp salt and 2 tbsp milk powder.
  5. Add 2 tbsp Oil.
  6. Mix it well to form a dough.
  7. Smooth it by kneading it for 3-4 minutes by hands.
  8. Apply some oil .Cover it and keep it in warm place for 2 hours or till it becomes double.
  9. In a wok heat 3 tbsp oil.Add 1 tsp mustard seeds,2 tsp cumin seeds,
  10. Add curry leaves,green chillies,ginger and garlic paste.
  11. Stir it .
  12. Add asafoetida,coriander powder,turmeric powder,mango powder, onions.stir well.
  13. Add potatoes and salt and mix well.Let it cook for 2 minutes Add chopped coriander and keep aside.
  14. Take the fermented flour and knead it well.
  15. Take small balls of the dough and stuff the potato masala in it.
  16. Close from all sides.Give milk wash and garnish with sesame seeds and Kasturi methi.
  17. Arrange them in greased baking pan.
  18. Cover and keep for 10 minutes to rise.
  19. Bake them at 200 degrees celcius for 10-12 minutes in a preheated oven.
  20. Serve with garlic chutney ,onion and sauce.
