Grind all the ingredients for chutney and take out the chutney in a bowl.
Make a thick besan paste for the vada.
Heat about 2 tbsp of oil in a pan. Add jeera and mustard seed. When they splutter, add onion and lightly saute then add crushed ginger garlic chilies paste. Cook for 5 mins then add haldi.
Mash the boiled potatoes and add salt as per taste. Add chopped coriander leaves and add mashed potatoes to the onion mixture. mix and cook for 5 minutes. Take it out in a bowl.
Heat oil for frying. Make small balls of potatoes, coat with besan and fry.
Take a pav, spread green chutney, garlic chutney and put one vada in the middle. Have it with a cup of tea.
