heat the oil in a wok and wait for it to heat up
meanwhile, throughly rinse and serve the poha in a bowl
add sufficient water to soak the poha pre cooking for softening
once the oil heats, add the peanuts and sauté them till light brown
take them off heat and keep aside
add the potatoes next and sauté until crisp/ semi cooked on Low heat
once done, keep them aside
temper the same oil, with mustard, asafoetida and curry leaves
once the seeds splutter, reduce heat and add the green chillies
add the chopped onions and sauté until translucent
drain the water and sieve the poha while the onions cook
add the poha next and mix well
add the dry spices and season with salt
mix all the ingredients well and add the potatoes now
on Low heat and covered let the potatoes cook a little more
takeoff the lid and check if the potatoes are fully cooked and if the seasoning is right
turn off the heat and add the sautéed peanuts, lemon juice and coriander leaves
mix well and transfer on serving plates
enjoy while warm with a dash of lemon or nylon sev if needed
