Ingredients Serving: 3

  1. 1.5 cups of thick flattened rice(poha/Aval)
  2. 1 large potato peeled and sliced fine
  3. 1 medium onion chopped finely
  4. 2 green chillies chopped finely
  5. 8-10 Curry Leaves
  6. 1 teaspoon mustard seeds
  7. 1 teaspoon cumin seeds
  8. 2-3 tablespoon raw peanuts
  9. 1/2 teaspoon Turmeric powder
  10. a pinch of asafoetida powder/hing
  11. handful of finely chopped coriander leaves
  12. 2 tablespoon oil
  13. Salt to season
  14. juice of 1/2 large lemon
  15. nylon sev to serve with(optional)

Instructions

  1. heat the oil in a wok and wait for it to heat up
  2. meanwhile, throughly rinse and serve the poha in a bowl
  3. add sufficient water to soak the poha pre cooking for softening
  4. once the oil heats, add the peanuts and sauté them till light brown
  5. take them off heat and keep aside
  6. add the potatoes next and sauté until crisp/ semi cooked on Low heat
  7. once done, keep them aside
  8. temper the same oil, with mustard, asafoetida and curry leaves
  9. once the seeds splutter, reduce heat and add the green chillies
  10. add the chopped onions and sauté until translucent
  11. drain the water and sieve the poha while the onions cook
  12. add the poha next and mix well
  13. add the dry spices and season with salt
  14. mix all the ingredients well and add the potatoes now
  15. on Low heat and covered let the potatoes cook a little more
  16. takeoff the lid and check if the potatoes are fully cooked and if the seasoning is right
  17. turn off the heat and add the sautéed peanuts, lemon juice and coriander leaves
  18. mix well and transfer on serving plates
  19. enjoy while warm with a dash of lemon or nylon sev if needed
