ABOUT Moroccan Harcha RECIPE

Moroccan Harcha is a kind of pan fried semolina bread ,popularly served during breakfast. They tastes best warm with any kind of jam or cheese.

Ingredients Serving: 6

  1. Fine Semolina 2 cups
  2. Sugar 3 tablespoon
  3. Baking powder 2 teaspoon
  4. Salt 1 pinch
  5. Melted butter 1/2 cup
  6. Milk 1/2 cup to 3/4th cup
  7. Butter as required to grease the pan

Instructions

  1. In a mixing bowl, blend together semolina, sugar, baking powder, and salt
  2. Add melted butter, and blend with your hands just until the mixture is the consistency of wet sand.
  3. Add 1/2 cup milk and mix until dough forms.
  4. It should be a quite moist, almost wet dough. Add more milk if necessary.
  5. Leave the dough to rest for 20 to 30 minutes.
  6. Make small 1/2 inch thick disks out of the dough.
  7. Heat a non stick pan and grease with little butter.
  8. Add one disk or patty and cook in medium low heat for 2 minutes.
  9. Cook with lid on.
  10. Flip the disk and cook for 1 or 2 minutes more.
  11. When both sides are golden brown, remove from pan.
  12. Repeat the process and make all the Harcha or pan cakes.
  13. Serve warm with jam, jelly, sour cream or cheese.
