ABOUT Italian Rice RECIPE

Yummy and healthy combination of layered rice, vegetables with white and red sauce.

Ingredients Serving: 4

  1. Rice 2 cups (washed, drained and cooked)
  2. Vegetables, sliced - Onion 1
  3. Bell peppers 1
  4. Broccoli 1/2 or 1 if small
  5. Carrots 1
  6. Beans a few
  7. Red Sauce - Tomatoes 500 gms
  8. Garlic 5 pods
  9. Basil full bunch
  10. Sugar 1 to 2 tsp
  11. Tomato sauce 4 to 5 tbsp
  12. Salt as per taste
  13. Red chilli powder 1 tbsp
  14. Oregano 1 tbsp
  15. White Sauce: 1 cup Milk
  16. 1 tbsp Maida
  17. Salt as per taste
  18. Black pepper as per taste
  19. Cinnamon powder 2 pinch
  20. Butter 2 tbsp
  21. Mozzarella cheese 1 tsp, grated
  22. Cheddar cheese 1 tsp, grated
  23. Parmesan Cheese 1 tsp, grated

Instructions

  1. Cook rice with four cups of water, salt, a pinch of oregano and black pepper powder. Put a tsp of olive oil while cooking. Can add chopped garlic also.
  2. Make red sauce: Heat some oil in a large pan. Add garlic and tomato puree, basil leaves, salt, red chilli powder. Cover and cook till done. Put tomato ketchup in the end.
  3. Make White Sauce: In a pan, put butter, let it melt then add maida and fry a little. Add a cup of milk and stir continuously. No lumps should be formed. Add salt, black pepper and cinnamon powder. Cook till bubbles forms. Do not over cook.
  4. Wash and chop all the vegetbales. Fry onions and saute all of them. Stir fry. Do not over cook. Add salt and pepper to taste.
  5. Grate up all the cheese.
  6. In a bake dish. Put the red sauce, then the rice, then the vegetables. On top put the white sauce and spread the grated cheese.
  7. In the oven bake the Italian rice at 180 degree centigrade for 15-20 minutes or till the cheese melts.
  8. Serve hot.
