ABOUT italian garlic rice RECIPE

This is a fusion dish with some italian herbs and chinese spice. A perfect and quick, one pot meal.

Ingredients Serving: 5

  1. rice(white/Brown) - 1.5 cups
  2. garlic cloves 5-6 or garlic paste
  3. veggies-: french beans, carrots, capsicum, peas, onions [all of them chopped] - 1/4 th cup each
  4. soya sauce - 2 tsp
  5. sweet chilly sauce - 2 tsp
  6. vinegar - 1 tsp
  7. salt
  8. black pepper - 1 tsp
  9. red chilly powder - 1/2 tsp

Instructions

  1. soak the rice for min. 2 hours before use.(i used white basmati rice.)
  2. chop all the veggies.
  3. put the oil in the vessel.put the chopped garlic in it .fry it till its golden brown.
  4. now add the onions. it shouldnt be too short or long i.e. medium sized.
  5. dont overcook it. cook the onions till the start to be pinkish red so that it dosent losses its crunch.
  6. now add all the chopped veggies. stir it. cover the vessel for 3-4 min. so veggies get steamed. dont cook them completely so as it remains crunchy.
  7. now add 3-4 table spoon sweet chilly sauce, 3-4 spoon soya sauce, 2-3 table spoon vinegar.
  8. now put the 1 1/2 regular glass soaked and washed rice. add 3 glass water in it and add salt, black pepper powder and red chilly pepper powder in it.
  9. after 3-4 boils cover the vessel and cook the rice on slow flame for 20-23 min. so that they get cooked properly.
  10. now cook the rice on high flame, so as water also gets soaked side by side
  11. take care in between so as rice dont get sticked on bottom of vessel or over cooked.
  12. when 90- 95% of rice are cooked.switch off the flame and leave it covered so that it gets cooked completely and properly in the steam.
  13. after 8-10 min. remove the lid add the italian spices mix
  14. serve hot with boondi ar plain raita. or have it as it is.
  15. garnish with basil/coriander leaves.
