ABOUT Mangalore buns/banana puri RECIPE

This is one of the favourite breakfast recipe in south canara. And this puffed puris are served with either coconut chutney or veg saagu.

Ingredients Serving: 5

  1. 3 banana riped
  2. 1 or 2tbsp sugar
  3. 1/4th cup curd/yogurt
  4. 1tsp cumin/jeera
  5. A pinch of baking soda
  6. 1/2tsp salt
  7. 2 cup refined flour /maida
  8. Oil for deep frying

Instructions

  1. Firstly in a large mixing bowl take ripened banana(if u r having over ripened bananas it works well)
  2. Add in sugar 1 or 2 tbsp depending on sweetness of banana
  3. Mash smooth with the help of fork but do not blend banana in mixi
  4. Now add 1/4th cup curd, jeera, baking soda(not baking powder) and 1/2tsp salt
  5. Combine everything well with the help of spoon
  6. Further add maida,knead for 5mins till dough turns smooth
  7. Grease the dough with a tsp of oil, cover and rest in a warm place for 8hrs or overnight
  8. Next day knead the dough slightly & pinch a ball sized dough
  9. Dust with some maida and roll slightly thick than puri
  10. Further fry the buns in hot oil
  11. Fry the buns on both the sides keeping flame on medium, fry till buns turns dark golden brown in colour both sides
  12. Finally serve the banana puris/mangalore buns with chutney or saagu. You can also have them plain
