ABOUT Bathua paranthas RECIPE

Bathua is a gren leafy vegetable found and consumed mainly in winters in Northern India. It is rich in iron and has numerous other health benefits like antioxidant and anti-inflammatory properties.

Ingredients Serving: 3

  1. 2 cups whole wheat flour
  2. 3/4 cup blanched bathua leaves
  3. 1 onion
  4. 1 tsp carrom seeds
  5. 1/4 tsp turmeric powder
  6. 1/2 tsp red chilli powder
  7. 2-3 green chillies
  8. 1 tbsp fresh malai
  9. Salt,to taste
  10. Ghee or oil,as required

Instructions

  1. Blanch the bathua leaves in little water till they seem wilted.
  2. Take flour in a big bowl and add all the dry spices and salt.
  3. Add chopped onion,green chillies and blanched bathua leaves.
  4. Add 1 tbsp of fresh Malai .
  5. Make a dough with little water and keep it aside for 10-15 mins.
  6. Make small ball of the dough and roll out paranthas .
  7. Shallow fry them on a hot tawa with oil or ghee till golden brown on both sides.
  8. Serve hot with pickle or curd.
