Ingredients Serving: 3

  1. semolina 1 cups
  2. curd 1 cups
  3. boiled potatoes 3 nos
  4. chopped onion 1 nos
  5. salt 1 tsp
  6. red chilli powder 1/2 tsp
  7. turmeric powder 1/4 tsp
  8. coriander powder 1/2 tsp
  9. beetroot grated 1 nos
  10. eno fruit salt 1 tbsp
  11. oil 2 tbsp

Instructions

  1. In a bowl add semolina and curd mix well and rest for ½ an hour.
  2. Now mash boiled potato.
  3. In a pan add oil and heat it up.
  4. Add chopped onion and saute it.
  5. Add salt, red chilli powder, turmeric powder, coriander powder and mix well.
  6. Now add mashed potatoes and cook for 5 - 7 minutes.
  7. In a cooker add 1 cup water and boil it.
  8. Grease the idli stand with oil.
  9. After 30 minutes in semolina curd mixture add salt and grated beetroot and mix well.
  10. Add eno fruit salt and mix.
  11. Pour 1 tbsp batter on idli stand.
  12. Arrange 1 tbsp potato stuffing on it and again pour 1 tbsp batter of idli.
  13. Arrange the idli stand in cooker and steam it for 10 minutes.
  14. After 10 minutes remove the idli from idli stand.
  15. Our beetroot stuffed idli are ready to serve with tomato ketchup.
