Ingredients Serving: 5

  1. Basmati rice 2 cup
  2. Ghee 2tbsp
  3. Saffron 10-12 thread soak in 1/4cup milk
  4. 3-4tbsp refined oil
  5. Cottage cheese(paneer) 200gm.
  6. Carrot 2 cut in lengthwise
  7. Capsicum 1 cut in lengthwise
  8. Beans 1/2cup cut
  9. Potato 1 large cut in cube
  10. Hungcurd 1cup
  11. Ginger garlic paste 1 tbsp
  12. Nutri (Soya)chunks 1cup soaked
  13. Garam masala 1/2 sp.
  14. Salt to taste
  15. Kashmiri mirch 1/2sp.
  16. Orange colour 1-2pinch
  17. Yellow colour 1pinch
  18. Onion 2-3 sliced
  19. Green chilli 3-4 slits
  20. Coriander n mint leaf 1/2cup
  21. Whole spices as u like 1 sp
  22. 1 lemon juice

Instructions

  1. Soaked n boil the Nutri chunks and squeeze the water.
  2. Now take chop paneer , capsicum, potato, beans, carrot and soya chunks in mixing bowl add ginger garlic paste , orange colour, kashmiri mirch, garam masala, salt and lemon juice mix lightly and keep in freezer about half hour.
  3. Now wash the rice and pit deep pan on flame add water and rice n some whole spices and cook 90% rice.
  4. Now strain the rice with strainer cool down the rice add yellow n orange colour n take out the spices.
  5. Now take a pan on flame add oil and fry the some onion slice and take out on tissue papper.
  6. Now put the handi on flame add ghee add bayleaf n some whole spice add rest onion slice and slit chillis saute untill get pinkish.
  7. Now add marinated veggies and cook it. Now take out this half mixture in plate.
  8. Now layers the biryani add some rice fried onion, coriander n mint leaf, 1 spoon saffron milk again follow this process n complete the layering lastly add saffron milk n ghee .
  9. Now seal the handi with dough and lid.
  10. Put the handi 10 min. On flame medium flame.
  11. Now put the handi on tawa another 10-15min.on slow flame.
  12. Switch off the flame .
  13. Serve the biryani with chill raita.
