ABOUT Kerala Egg Roast RECIPE

Every family has its own version of egg curry. But kerala egg roast has its own charm and this recipe came to me from my paternal grandmom who also was a hardcore vegetarian but use to cook for her family.

Ingredients Serving: 4

  1. 4 hard boiled eggs
  2. 4 tbsp coconut oil
  3. 1 spring of curry leaves
  4. 2 big onions finely chopped
  5. 2 big tomatoes finely chopped
  6. 6 garlic cloves crushed
  7. 1/2 tsp pepper powder
  8. 1/2 tsp garam masala
  9. 1/4 tsp turmeric powder
  10. Salt according to taste

Instructions

  1. In a pan heat coconut oil and add finely chopped onions, curry leaves and garlic. Saute it till they are golden brown.
  2. Then add in finely chopped tomatoes and cook till they are soft and mushy and the oil starts to ooze out.
  3. Next add in the spice powders and salt as mentioned in the ingredient list.
  4. Again saute till raw smell of masala goes off. Add in little water and cover the pan and cook.
  5. Add in little water and cover the pan and cook. Once the masala is cooked you will see the oil floating at the top.
  6. At this point add in hard boil egg and coat it well with the masala. Cook for one minute.
  7. Serve hot with parantha or with aapam.
