Every family has its own version of egg curry. But kerala egg roast has its own charm and this recipe came to me from my paternal grandmom who also was a hardcore vegetarian but use to cook for her family.
In a pan heat coconut oil and add finely chopped onions, curry leaves and garlic. Saute it till they are golden brown.
Then add in finely chopped tomatoes and cook till they are soft and mushy and the oil starts to ooze out.
Next add in the spice powders and salt as mentioned in the ingredient list.
Again saute till raw smell of masala goes off. Add in little water and cover the pan and cook.

At this point add in hard boil egg and coat it well with the masala. Cook for one minute.
Serve hot with parantha or with aapam.
