Goes well with appam or chapathis,this recipe i learnt from a food blog.

Ingredients Serving: 3

  1. 1) eggs boiled n deshelled_4 nos
  2. 2) onions sliced thinly_3 large
  3. 3) tomatoe ripe_1 medium
  4. 4)salt as required
  5. 5)oil preferably coconut oil_ 4 tbsp
  6. 6) curry leaves_2 strings
  7. 7) ingredients to crush in a mortar and pestle
  8. a) fennel seeds_ one tbsp
  9. b) pepper corns_ one tbsp
  10. c)ginger n garlic_one tbsp each
  11. 8)red chillie powder_one tbsp
  12. 9) turmeric Powder_half tsp
  13. 10) coriander powder_one tbsp
  14. 11) garamasala powder_one tsp
  15. 12) sugar- a pinch
  16. 13) green chillie_ one

Instructions

  1. Take a kadai,add oil,add the crushed ingredients,when a nice aroma comes,add sliced onions,keep sauteing on a medium flame until it turns light golden colour.
  2. Then add all the masala powdes, tomato chopped, curry leaves, one green chillie,saute well till oil seperate, then add lil water,mix well, check salt,add if required,add pinch of sugar,mix well.
  3. Add deshelled eggs in the gravy,cover n cook on medium flame for 5 minutes,water should be absorbed nicely,n finally garnish with fresh coriander leaves.
