Ingredients Serving: 3

  1. 350 mili litre full creme milk
  2. 1 Cup water
  3. 70 grams powdered jaggery
  4. 70 grams mixed quinoa seeds
  5. 2 tablespoon sago/sabudaana
  6. handful of mixed nuts
  7. 1.5 teaspoon ghee
  8. 1 tablespoon Cardamom powder

Instructions

  1. rinse both quinoa and sago pearls separately
  2. soak them separately in half cups of water each for 30 minutes
  3. slice/chop the nuts finely meanwhile
  4. post soaking, strain the water from quinoa and sago pearls
  5. melt the ghee in a heavy bottom saucepan
  6. add the quinoa seeds and sauté for a minute over medium heat
  7. then add 1/4th the quantity of milk in the pan
  8. reduce the heat and cook the quinoa covered after the milk boils
  9. after about 12-15 minutes, the quinoa should be ready
  10. add the remaining milk now
  11. follow it up by adding jaggery and cardamom powder
  12. mix well and cook on Low heat as the kheer thickens
  13. just before your desired consistency of the kheer would be achieved, add the sago pearls and mix
  14. keep cooking for another 1-2 minutes and then take off heat
  15. transfer into serving bowls and serve warm garnished with sliced nuts
  16. refrigerate and serve if you love kheer chilled
  17. enjoy!
