ABOUT Gobhi Manchurian RECIPE

Gobhi manchurian is one of the most popular Indo-Chinese dish to exist. I have made this dish healthier by baking the cauliflower instead of frying it.

Ingredients Serving: 4

  1. 1 medium Cauliflower cut in florets
  2. Water: 4 litre
  3. Cauliflower coating Ingredients:
  4. Corn flour: 2 tbsp
  5. All purpose flour: 1 tbsp
  6. Kashmiri red chilli powder: 1/2 tsp
  7. Ginger garlic paste: 1/2 tsp
  8. Soy sauce: 1 tbsp
  9. Sauce Ingredients:
  10. Cooking oil: 1 tbsp
  11. Onion: 1 medium chopped fine
  12. Garlic: 4-6 cloves chopped fine
  13. Ginger: 1 inch piece chopped fine
  14. Green chillies: 4-6 slit
  15. Scallions: 2-3 finely chopped
  16. Soy sauce: 2 tbsp
  17. Tomato sauce: 2 tbsp
  18. Chilli sauce: 1 tsp ( optional)
  19. Salt to taste
  20. Sugar 1/4 tsp

Instructions

  1. Bring to a boil 4 litre water with 1/4 tsp salt in a saucepan. Turn off the flame.
  2. Put the cauliflower florets into the water. Let it sit for 5 minutes. Then dry these florets off using paper towels.
  3. Then put these florets into a microwave-safe bowl and steam them for 4-5 minutes. Let it cool.
  4. Preheat the oven to 204 degrees celsius. Line a baking sheet with parchment paper and keep it ready.
  5. Once the florets have cooled down, put them in a ziplock/ plastic bag.
  6. Add in cornflour, all purpose flour, red chilli powder, ginger-garlic paste, soy sauce, and shake the bag so that it mixes well.
  7. Now arrange the florets on the baking sheet in a single layer. Bake them for 20-30 minutes, turning them once half-way through.
  8. Note that these florets should be nice and crisp and should not burn.
  9. Meanwhile, heat oil in a wok/frying pan on a high flame.
  10. Add the chopped garlic, chopped ginger and sauté this for a few seconds. Then add in the chopped onions and sauté until the onions turn transparent in colour.
  11. Put in the green chillies and pour in the sauces.
  12. Aslo, put in the baked cauliflower florets and mix all the ingredients well until they are finely blended.
  13. Serve hot as an appetizer or a side dish for lunch/dinner.
