Gobhi manchurian is one of the most popular Indo-Chinese dish to exist. I have made this dish healthier by baking the cauliflower instead of frying it.

Ingredients Serving: 4
1 medium Cauliflower cut in florets
Water: 4 litre
Cauliflower coating Ingredients:
Corn flour: 2 tbsp
All purpose flour: 1 tbsp
Kashmiri red chilli powder: 1/2 tsp
Ginger garlic paste: 1/2 tsp
Soy sauce: 1 tbsp
Sauce Ingredients:
Cooking oil: 1 tbsp
Onion: 1 medium chopped fine
Garlic: 4-6 cloves chopped fine
Ginger: 1 inch piece chopped fine
Green chillies: 4-6 slit
Scallions: 2-3 finely chopped
Soy sauce: 2 tbsp
Tomato sauce: 2 tbsp
Chilli sauce: 1 tsp ( optional)
Salt to taste
Sugar 1/4 tsp
Instructions
Bring to a boil 4 litre water with 1/4 tsp salt in a saucepan. Turn off the flame.
Put the cauliflower florets into the water. Let it sit for 5 minutes. Then dry these florets off using paper towels.
Then put these florets into a microwave-safe bowl and steam them for 4-5 minutes. Let it cool.
Preheat the oven to 204 degrees celsius.
Line a baking sheet with parchment paper and keep it ready.
Once the florets have cooled down, put them in a ziplock/ plastic bag.
Add in cornflour, all purpose flour, red chilli powder, ginger-garlic paste, soy sauce, and shake the bag so that it mixes well.
Now arrange the florets on the baking sheet in a single layer. Bake them for 20-30 minutes, turning them once half-way through.
Note that these florets should be nice and crisp and should not burn.
Meanwhile, heat oil in a wok/frying pan on a high flame.
Add the chopped garlic, chopped ginger and sauté this for a few seconds. Then add in the chopped onions and sauté until the onions turn transparent in colour.
Put in the green chillies and pour in the sauces.
Aslo, put in the baked cauliflower florets and mix all the ingredients well until they are finely blended.
Serve hot as an appetizer or a side dish for lunch/dinner.
