Its a healthy breakfast with less oil.

Ingredients Serving: 2

  1. Thick Poha 2 cup
  2. Sliced onion 2
  3. Chopped green capsicum 1
  4. Chopped Cabbage 100gm
  5. Chopped French beans 5-6
  6. Chopped tomato 1
  7. Chopped Carrot 1/2pc
  8. Chopped green chilli 1
  9. Curry leaves 7-8
  10. Peanuts 7-8
  11. Chopped coriander for garnishing
  12. 1/2 spoon oil
  13. Mustard seeds 1/4 spoon
  14. Salt
  15. Lemon Juice 1 Spoon
  16. Sugar 1 spoon(optional)

Instructions

  1. Strain the poha 2 times in a running water. And keep it aside for 10 min.
  2. Heat the oil in a pan. And add mustard seeds in it. When the seeds will start spluttering add peanuts, Curry leaves and green chilli. Fry it for 10 sec.
  3. Add all the vegetables except tomato. And fry it for 5 min. Add salt in it. Keep the flame low.
  4. Add sugar and lemon. Mix it well.
  5. Add poha in it and mix it well again.
  6. Add tomato and Cover the pan with lid and let it be cooked on low flame for other 2 min.
  7. Garnish it with coriander and the Poha is ready to eat.
