No Indian meal is complete without rice. Serving the most popular South Indian Islamic traditional ghee rice, mutton kurma and dalcha,onion raitha is really delicious in the festive occasions.

Ingredients Serving: 10

  1. Ghee Rice Ingredients :-
  2. Basumati or Seeraga samba rice -1 to 1.1/4 kg
  3. Oil -75 ml
  4. Ghee - 75 ml
  5. Cardamom -8,cloves -8,cinnamon -3 pieces
  6. Briyani leaf -2
  7. Chopped Onion -2
  8. Chopped tomato -1
  9. Green chilli -4 -6
  10. Ginger garlic paste -2 heaped table spoon
  11. Curd -150-200 ml
  12. Lemon -small -1
  13. Curry leaves -few
  14. Chopped Coriander & mint leaves -each quarter cup
  15. Water -1 : 1+3/4
  16. Salt - To taste.
  17. Mutton kurma ingredients :-
  18. Mutton -1 kg
  19. Oil -100 ml
  20. Ginger garlic paste -3 tsp
  21. Garam masala-1/2 tsp
  22. Chopped onion medium-4
  23. Chopped medium tomato -4
  24. Green chilli -6 -8
  25. Chopped coriander,mint leaves -each handful
  26. Curd-100 ml
  27. Chilli powder-2 tsp
  28. Coriander powder-2 tsp
  29. Cumin Powder-1 tsp
  30. Fennel powder-1 tsp
  31. Salt -to taste.
  32. To Grind:
  33. Grated half coconut & 10 cashew nuts
  34. Dalcha ingredients:-
  35. Toor dal- 150gm
  36. Brinjal -200 gm
  37. Mango small-1
  38. Ash gourd - few pieces
  39. Onion-1 big
  40. Tomato -1 big
  41. Green chilli -2
  42. Turmeric Powder -1/2 tsp
  43. Chilli powder-1 tsp
  44. Coriander Powder-1 tsp
  45. Cumin& fennel powder-1/2 tsp
  46. Coriander mint leaves -few
  47. Ginger Garlic paste -2 tsp
  48. Garam masala-1/4 tsp
  49. Tamarind small lemon size
  50. Salt - to taste
  51. For tempering:-
  52. oil - 1-2 tbsp
  53. Mustard& urad dal-1 tsp
  54. Dry chilli-2
  55. chopped onion small -1
  56. Few curry leaves.
  57. Onion raitha Ingredients:-
  58. Thick curd 2 cups
  59. Chopped onions -5
  60. Chopped green chilli -2
  61. Chopped coriander leaves -few
  62. Salt to taste.

Instructions

  1. Wash well, soak rice with enough water for 30 minutes.
  2. Heat ghee and oil,add bay leaves,cinnamon,cardamom and cloves. Fry for few seconds,then add sliced onions,green chillies, Stir fry the onion for a minute or two,add ginger garlic paste. Stir well in a low flame.then add curd and mix well.
  3. Add chopped tomato and salt to taste.
  4. Then pour the measured water into the vessel,add chopped mint & coriander leaves,close with lid,leave it to boil.squeeze lemon.
  5. When the water starts boiling add drained soaked rice.check salt.
  6. Cover with lid,cook for 15 minutes in a low flame.
  7. Switch off the stove and leave to stand,still coveted for 15 minutes. Open mix and serve hot.Ney choru ready.
  8. Mutton kurma. Clean wash thoroughly and drain the mutton pieces. Marinate the mutton with curd, 1 tsp full gg paste and salt to taste.
  9. Heat oil in a pressure cooker,add chopped onion fry till golden brown,add 2 tsp full gg paste,garam masala sauté for a minute. Then add chopped tomato,chopped mint ,coriander leaves,add little salt ,leave the tomatoes to soft.Add chilli powder.
  10. Mix well. Transfer the mutton pieces.add coriander,cumin,fennel powder,mix well.add green chillies and 2 cups water and salt to taste.
  11. Cook for 5 whistles. Open carefully after pressure released.
  12. Then add coconut cashew paste and add water for medium thickness.Allow it boil for 3-5 minutes ,simmer till oil oozes out. Delicious mutton kurma is ready.
  13. Dalcha ingredients ready. Pressure cook dal with turmeric powder,add enough water.
  14. In a vessel add all chopped veggies except mango pieces,gg paste,garam masalas,onion,tomato,green chillu,coriander,mint leaves and other masala powders and add enoughwater. cook till soft.
  15. When vegies cooked soft,add mango pieces cook for 2 minutes, add tamarind water and salt to taste. Let it boil. Transfer the cooked dal.mix well.Allow it to boil.Add little salt to taste.
  16. Heat oil,add mustard,urad dal,dry chilli and curry leaves.add chopped onion,fry till golden brown. Transfer it to dalcha and switch off. Now authentic dalcha ready.
  17. To make onion raitha in a bowl add finely chopped onion,green chilli,coriander leaves,salt to taste and thick curd.mix well. Easy onion raitha ready.
  18. Serve traditional ghee rice with mutton kurma,dalcha and onion raitha.
