All usually make daal batis but stuffing daal bati enhances the taste of bati ..This makes our dish more appetising...stuff bati is usually served with kadi or also eaten with fresh fried chillies topped with salt and pepper..

Ingredients Serving: 4

  1. For bati..
  2. 4 cups wheat flour
  3. 1 cup maize flour
  4. 1 tsp carom seeds
  5. 1 tsp turmeric
  6. 2tsp oil
  7. 2 tsp fresh cream/or curd
  8. Salt as per taste
  9. Water to knead the dough
  10. For stuffing
  11. 4 boiled potatoes
  12. 1 cup boiled potatoes
  13. Green chilli ginger paste 2 tsp
  14. Oil 2 tsp
  15. Cumin seeds 1 tsp
  16. Mustard seeds 1 tsp
  17. Turmeric 1 tsp
  18. Salt
  19. Lemon juice 1 tsp
  20. Curry leaves few
  21. Coriander leaves finely chopped 2 tsp
  22. For kadi
  23. Curd 1 cup
  24. Gram flour 1 tsp
  25. Water 2 cups
  26. Oil 1 tsp
  27. Cumin seeds 1 tsp
  28. Curry leaves few
  29. Green chilli paste 1 tsp
  30. Hing pinch
  31. Salt

Instructions

  1. Firstly knead the dough by adding wheat flour,maize flour,turmeric,carom seeds,oil, cream,salt,water to semi soft texture..Cover and keep aside for 20 min
  2. Now heat a wok..Add oil,cumin and mustard seeds and wait till they crackle..Now add chilli ginger paste,curry leaves,turmeric ,curry leaves, and saute for few min. Then add boiled mashed potatoes,peas ,salt and lemon juice.mix well and cook for 5 min..Off the flame
  3. Take small portion of dough..Roll it into small puri and stuff one ball of potato pea mixture in it
  4. Apply little oil at the corners of the puri..And make a potli of it by enclosing all the sides
  5. Repeat the same process for all the dough..Place it on the perforated plate.
  6. Steam this in the steamer for 10 min..Then allow it to cool..
  7. Heat the bati maker...And place the baris on the grill stand of the bati maker and roast slowly by turning to all the sides..
  8. Now dip each bati in ghee anb keep aside
  9. For kadi...Churn curd,gram flour and water to fine puree and keep aside
  10. Heat a wok,add oil,cumin seeds and wait till they become brown...Now add green chilli paste, hing,turmeric,curry leaves,chopped coriander and saute for few min
  11. Now add the curd mixture in the tadka and boil for few min by stirring continuously..Add salt in the last
  12. Serve hot masala bati with kadi...
