ABOUT MIXED VEGETABLES KOLHAPURI RECIPE

Maharashtra, specially Kolhapur is known for its hot and spicy Cuisine. Kolhapuri masala is made with dry red chiliies, coconut and lot of spices..Delicious veg and non veg dishes can be prepared with this masala. Today I have made mixed vegetable curry. You can use any vegetables of your choice. This can be served with plain rice or bhakri.

Ingredients Serving: 4

  1. Potatoes ... 2 (cut into cubes)
  2. Green peas .. 1/4 cup
  3. Carrots ....... 1 (cut into pieces)
  4. Capsicum.... 1 (cut into big pieces)
  5. Garlic paste .. 1 tbsp
  6. Onions ........ 1 large (diced finely)
  7. Tomatoes ... 1
  8. Turmeric powder .. 1/2 tsp
  9. Salt .............. to taste
  10. Kolhapuri masala .... 2-3 tbsps (as per your liking)
  11. Coconut milk .......... 4-5 tbsps
  12. Oil ...................... 4 tbsps
  13. (For Kolhapuri Masala)
  14. Cloves ............... 12
  15. Cinnamon ........ 2 inch piece
  16. Black pepper .... 1/2 tsp.
  17. Mace .................. 1 full piece
  18. Coriander seeds ..1 tsp.
  19. Bay leaf ............... 1
  20. Poppy seeds.......... 2 tsp. (Khus khus)
  21. Cumin seeds .......... 1/4 tsp.
  22. Fennel seeds .......... 1/2 tsp. (saunf)
  23. Star anise ................ 1 piece
  24. Cardamoms ............ 2-3
  25. Dry red chillies ........ 7-8
  26. Dry coconut ............. 1 tbsp. (Dessicated)
  27. Oil to roast ............ 1tsp.

Instructions

  1. Roast and dry grind to a coarse powder. This is a closer version of the Kolhapuri masala. The original one has few more spices, which are difficult to get outside Maharashtra. However this spice blend is equally good for Kolhapuri dishes.
  2. Heat oil in a pan and add garlic paste. Saute.
  3. Tip in the finely diced onions and saute until translucent.
  4. Next add the tomato and cook until it is soft.
  5. Tip in the mixed vegetables of your choice. Add turmeric powder and salt.
  6. Saute for a minute and add 2 cups of water.
  7. Cook until half done and add the Kolhapuri masala powder. Stir it and simmer to cook.
  8. When almost done add the coconut milk.
  9. Stir carefully and adjust the gravy to your liking.
