Ingredients Serving: 6

  1. Taro leaves - 250 gm
  2. Coconut grated - 1 cup
  3. Green chilli - 4 no
  4. Whole cumin seeds - 1 teaspoon
  5. Bay leaf - 2 no
  6. Shrimps - 100 gm
  7. Cumin powder - 1 teaspoon
  8. Coriander powder - 1 teaspoon
  9. Red chilli powder - 1 teaspoon
  10. Turmeric powder - 1/2 teaspoon
  11. Sugar - 1 tablespoons
  12. Salt to taste
  13. Mustard oil - 2 tablespoons

Instructions

  1. Cut taro leaves into long strips after removing the outer layer .
  2. Wash kochu saag or taro leaves properly and then take those in a deep bottom pan with 1/2 teaspoon of salt .
  3. Start cooking on low flame by covering the pan with a lid around 10 minutes .
  4. Now discard water from saag completely by squeezing the saag .
  5. Heat oil in a pan add cumin seeds and bay leaf .
  6. Then add the shrimp and grated Coconut and all spices .
  7. Fry for a minutes add mashed saag and mix well .
  8. Start cooking on low flame till water evaporate and all the masala and saag are completely mix together .
  9. Stir constantly and fry for few minutes when oil leaves the side of the pan then switch off the flame .
  10. Serve kochu saag er ghonto with steamed Rice .
