ABOUT Batata Wadas RECIPE

This is a very popular Indian street food. This street food is almost to be found at every chat vendor's stall. Its taste is crispy from outside and soft and spicy from inside. In this monsoon it is a perfect treat at the evening tea time. So you must try it in your home and enjoy this monsoon without any health risks of eating street food.

Ingredients Serving: 4

  1. 3 medium size Boiled Potatoes
  2. 5 gm ginger
  3. 3 flakes garlic finely chopped
  4. 2 Green chillies finely chopped
  5. 2 tbsp coriender leaves chopped
  6. Salt to taste
  7. 1/2 tsp sugar
  8. 1 tsp Lemon juice
  9. 1/2 tsp turmeric powder
  10. 1/4 tsp mustard seeds
  11. 1/4 tsp cumin seeds
  12. 10 curry leaves
  13. A pinch Asafoetida
  14. 150 gm Bengal gram flour
  15. 1 tsp rice flour
  16. 1/4 tsp baking powder
  17. 1 tsp red chilli powder
  18. 500 ml refined oil for frying
  19. 1/4 tsp black salt

Instructions

  1. To make batter: Shift together gram flour, rice flour, turmeric powder, baking powder, salt and chilli powder into a bowl and add water stirring constantly to make a smooth batter.
  2. Keep aside for 15 minutes.
  3. Peeled the boil potatoes and while still hot, slightly mashed so that some small pieces remain.
  4. Add chopped ginger, garlic, coriander leaves, salt, sugar, lemon juice and turmeric powder to mashed potato and mix well.
  5. Hit oil in a pan on medium heat.
  6. Add mustard seeds. When cracking, add cumin seed and curry leaves. Stir fry for a few seconds then add asafoetida.
  7. Add to potato mixture and mix well.
  8. Make 12 balls 4 cm in diameter.
  9. To fry wadas, heat oil in a pan on high heat.
  10. Roll 4 balls in batter to coat.
  11. Add one after the other to hot oil and reduce heat to medium.
  12. Fry till light golden brown.
  13. Remove and drain.
  14. Fry the remaining balls in the same way, increasing heat after each batch.
  15. Sprinkle some black salt over it and Serve hot with hot and sweet tomato sauce.
