ABOUT Sindhi Style Mutton Curry! RECIPE

Slow cooked mutton in onion & curd gravy! Scented with Mace-Nutmeg-Cardamom!

Ingredients Serving: 4

  1. Mutton 500gms
  2. Ginger-Garlic-Green Chilli paste 2 Tablespoons
  3. Onions 3 large
  4. Curd 1 cup
  5. Water 1/2 cup
  6. Whole Spices (mace, nutmeg, green cardamom, black cardamom, cinnamon)
  7. Kashmiri red chilli powder
  8. Coriander powder
  9. Salt
  10. Ghee/Oil

Instructions

  1. Clean and wash the mutton.
  2. Heat oil or ghee in a pressure cooker, add roughly chopped onions, ginger-garlic-green chilli paste and sauté for 2 min.
  3. In a mortar and pastel grind one green cardamom, a small piece of cinnamon and black cardamom.
  4. Add the spice mix to the onions and add the mutton. Give it a gentle mix and pressure cook it till 3 whistles followed by a slow simmering for 15 minutes.
  5. Wait till all the pressure in released, open the lid and cook the mutton mixture on high flame till all the water that is extracted from mutton and onions is evaporated.
  6. Add the curd, and sauté it gently.
  7. Cook it on high flame till all the water is evaporated again.
  8. Add red chilli powder, coriander powder and salt. Sauté gently.
  9. Add water.
  10. In a mortar pastel make another spice mix of green cardamom, mace and nutmeg. Sprinkle over the mutton.
  11. Cover the pressure cooker with a cover (no need for the pressure cooking)
  12. Cook it on the slow flame for 15-20 minutes.
  13. Serve hot with chapatis or rice!!
