Ingredients Serving: 3

  1. 7 BabyCorn cut in half
  2. For marination and frying:
  3. 1 1/2 Tablespoons Rice Flour
  4. 1 Tablespoon Maida / All Purpose Flour
  5. Salt as per need
  6. 1/2 teaspoon black pepper powder
  7. 1 Teaspoon Red Chilli Flakes
  8. 1/2 Teaspoon Garlic Bread Spice Mix
  9. Water to make smooth paste
  10. Oil for Deep frying
  11. Additional:
  12. 2 Tablespoons Oil
  13. 6 Garlic cloves,chopped finely
  14. 2 Medium Green Chillies,slit
  15. 2 Sprigs Cilantro,finely chopped
  16. 2 Sprigs Spring Onion,finely chopped
  17. Salt as per need
  18. 1/2 teaspoon black pepper powder
  19. 1/2 Teaspoon Red Chilli Sauce
  20. 1 and 1/2 Tablespoons Chilli Garlic Sauce
  21. 1/2 Teaspoon Sesame Seeds

Instructions

  1. Firstly,wash the Baby Corn and dry them with a kitchen towel. Cut each Baby Corn into half. Now in a mixing bowl,add all the ingredients mentioned under marination, except oil and water.
  2. Mix them well. Add water little by little to form a smooth paste. The paste should neither be too thick nor too thin or watery. In a deep frying pan, heat oil.
  3. When the oil is hot enough, bring the flame to medium. Coat all the Baby Corn pieces with the batter. Now slowly drop each piece in the hot oil and deep fry them till they are crispy and fried well.
  4. Drain them on absorbent paper. In a heavy bottom pan, add oil. When the oil gets hot,add garlic,green chillies,cilantro. Fry them for a while.
  5. Now add the spring onion whites and toss them for while on high flame. Now reduce the flame and add salt,pepper powder,chilli sauce,garlic sauce. Mix well together.
  6. Bring the flame back to high and add fried Baby Corn. Toss them on high flame so that they get coated well with the sauce mixture. Now switch off the flame and granish it with sesame seeds and spring onion greens.Serve hot and enjoy.
