ABOUT SCHEZWAN SOYA KILLER MUFFINS RECIPE

Soya mince is a nutritious vegetarian and vegan mince . Soya granules and nuggets gained popularity as a healthy alternative to meat . It ensures a good level of protein without the harmful effects of meat . This is my one of signature dish and it is super easy to cook and taste just out of the world .......

Ingredients Serving: 4

  1. For Schezwan Soya keema
  2. Soya chunks - 1 cup
  3. Onion chopped - 1 large
  4. Carrots chopped - 4 tablespoons
  5. Beetroot chopped - 2 tablespoons
  6. Capsicum chopped - 2 tablespoons
  7. Ginger garlic paste - 1 teaspoon
  8. Tomato sauce - 1 tablespoons
  9. Schezwan chutney - 2 tablespoons
  10. Salt to taste
  11. Sugar - 1 teaspoon
  12. Cashews and raisins - 2 tablespoons
  13. For MUFFINS batter
  14. All purpose flour - 1 cup
  15. Hung curd - 1/2 cup
  16. Oil - 6 tablespoons
  17. Powder sugar - 2 tablespoons
  18. Lemon juice - 1 teaspoon
  19. Cinnamon powder - 1 teaspoon
  20. A pinch of salt
  21. Parmesan cheese - 1 cup

Instructions

  1. Schezwan chilli soya ....
  2. Heat 1 cup of water, bring it to boil add a pinch of salt and soya chunks mix well , switch off the flame and cover it for 5 minutes .
  3. Squeeze all the water in soya chunks and make a smooth paste in blender .
  4. Heat oil in a pan add onion and fry for few minutes then add carrots and beetroot and fry well .
  5. Now add the soya Keema and fry for few minutes .
  6. Now mix the capsicum and stir fry .
  7. Add the salt , sugar and schezwan chutney and chilli flakes and mix well .
  8. Fry it for 5 minutes then add cashewnuts and raisins and mix well .
  9. In a mixing bowl add curd and whisk well . Then add the sugar and whisk well .
  10. Now add oil , cinnamon powder and lemon juice and mix well .
  11. Add the flour and whisk well and make a smooth muffins batter .
  12. Grease a muffins tray into the batter and pour the 2 tablespoons of batter .
  13. Now add 1 tablespoons soya Keema in the top of the batter .
  14. Preheat the oven 200℃ for 10 minutes . And bake the muffins in 20 - 25 minutes or until it rises up .
  15. Now add the grated Parmesan cheese on the top of the muffins and again bake for 5 minutes .
  16. Serve and enjoyyyyyyyyy :relaxed:️
