ABOUT Curd Quinoa RECIPE

Healthy Indian style quinoa recipe made with curd and garnished with yummy tadka.

Ingredients Serving: 4

  1. Curd 2 cup
  2. Quinoa 1/2 cup
  3. Peanuts 1/4 cup
  4. Mustard seeds 1Tsp
  5. Cumin seeds. 1Tsp
  6. Urad dal. 1Tsp
  7. Dry red chillies. 2No
  8. Curry leaves. 5-6No.
  9. Salt to taste
  10. Water 1 cup for cooking quinoa
  11. Olive oil. 1Tbsp
  12. Coriander leaves chopped. 1Tbsp

Instructions

  1. POUR QUINOA IN TO A FINE MESH COLANDER AND WASH 3-4TIMES OR TILL WATER TURNS CLEAR.
  2. DRAIN WELL AND KEEP ASIDE.
  3. IN A SAUCE PAN ADD 1 CUP OF WATER AND TURN ON THE HEAT.
  4. ADD SALT TO WATER AND MIX WELL.
  5. WHEN WATER STARTS BOILING LOWER THE HEAT AND ADD WASHED QUINOA.
  6. BRING TO BOIL ON MEDIUM HEAT.
  7. LOWER THE FLAME ,COVER AND COOK FOR 10-15 MINUTES.
  8. AFTER 15 MINUTES TURN OFF THE HEAT,COVER THE PAN FOR FEW MORE MINUTES.
  9. WITH THE HELP OF FORK GENTLY TRANSFER THE COOKED QUINOA INTO THE PLATE.
  10. SPREAD COOKED QUINOA ON THE PLATE,THIS WILL STOP THE COOKING PROCESS.
  11. ADD CURD IN A BIG BOWL AND WHISK.
  12. ADD COOKED QUINOA TO THE CURD.
  13. MIX COOKED QUINOA TO THE CURD.
  14. KEEP ASIDE THE PREPARED CURD QUINOA MIXTURE.
  15. HEAT OIL IN A PAN.
  16. ADD MUSTARD SEEDS,CUMIN SEEDS,URAD DAL TO THE OIL.
  17. WHEN DAL TURNS GOLDEN BROWN IN COLOUR ADD PEANUTS,CURRY LEAVES, DRY RED CHILLIES AND MIX WELL.
  18. TOSS WELL AND TURN OFF THE HEAT.
  19. ADD PREPARED TADKA TO CURD QUINOA MIXTURE.
  20. MIX EVERYTHING WELL.
  21. CURD QUINOA IS READY TO SERVE,GARNISH IT WITH CHOPPED CORIANDER LEAVES.
