ABOUT CURD QUINOA RECIPE

Quinoa a super food, gluten free, protein rich and has loads of essential nutrients

Ingredients Serving: 1

  1. Dried quinoa 1/2 cup
  2. Fresh curd 1 cup
  3. Cucumber finely diced 1/2 cup
  4. Curry leaves 8-10
  5. Grated ginger 1/4 tsp
  6. Dried red chilli, small and broken 1
  7. Black mustard seeds 1/4 tsp
  8. Salt 1/4 tsp or as per taste
  9. Pomace olive oil 1/2 tsp

Instructions

  1. Cook quinoa as per instructions (1 cup raw Quinoa gives 2 cups of cooked quinoa. For cooking it takes double the amount of water.)
  2. Keep aside to cool down
  3. In a bowl whisk curd, add cucumber and cooled quinoa. Mix well
  4. Heat oil in a pan add mustard seeds and chillies. Add curry leaves and ginger and pour on curd mixture.
  5. Take with sweet or sour lemon pickle, some cheese or even as it is.
