ABOUT Dahi Papad Ki Sabzi RECIPE

Papad sabzi is a traditional recipe from Rajasthan which can be prepared instantly by frying the papads and sautéing them in gravy made of curd-tomato.

Ingredients Serving: 4

  1. Papad – ½ cup
  2. Tomato – 2 (ground)
  3. Green chilly – 1
  4. Oil – 2 to 3 tbsp
  5. Ginger – 1 inch piece
  6. Green coriander – 2 to 3 tbsp (finely chopped)
  7. Dry fenugreek leaves – 1 tbsp
  8. Cumin seeds – ½ tsp
  9. Turmeric powder – ¼ tsp
  10. Coriander powder – 1 tsp
  11. Red chilly powder – ¼ tsp

Instructions

  1. DAHI PAPAD KI SABZI
  2. TOMATO-GINGER-GREEN CHILLY PASTE
  3. ADD ½ CUP WATER IN THE CURD AND WHISK WELL.
  4. TAKE 2 TBSP OIL IN WOK AND HEAT SUFFICIENTLY. WHEN THE OIL IS HOT, ADD CUMIN SEEDS. SAUTE FOR WHILE.
  5. THEN ADD ASAFOETIDA, TURMERIC POWDER, CORIANDER POWDER AND DRY FENUGREEK LEAVES AND MIX IT WELL.
  6. CORIANDER POWDER AND MIX IT WELL.
  7. NOW ADD TOMATO-GINGER-GREEN CHILLY PASTE, FOLLOWED BY RED CHILLY POWDER AND SAUTE THE MASALA UNTIL OIL STARTS SEPARATING FROM IT.
  8. AFTER SAUTEING THE MASALA ADD 1 CUP WATER AND STIR TO MIX EVERYTHING WELL.
  9. COVER AND ALLOW IT TO SIMMER UNTIL YOU SEE GENTLE BOIL IN IT.
  10. NOW THAT THE GRAVY IS SIMMERING, ADD CURD, IN LITTLE PARTS AND STIR THE
  11. GRAVY CONSTANTLY UNTIL IT SIMMERS AGAIN, ELSE CURD CAN COAGULATE.
  12. NOW ADD SOME SALT AND MIX IT WELL.
  13. BREAK THE PAPADS IN SMALL CHUNKS AND ADD THEM TO THE GRAVY.
  14. COVER THE SABZI AND COOK ON LOW FLAME FOR 2 MINUTES. CHECK THE SABZI NOW, IT’S READY.
  15. PAPAD KI SABZI IS NOW READY TO SERVE WITH ROTI
