Ingredients Serving: 3

  1. Eggplant - 400 g
  2. Kashmiri chilly powder- 1 teaspoon
  3. Coconut grated - 1/2 cup
  4. Mustard seed- 1/2 teaspoon
  5. curry leaves
  6. Salt to taste
  7. Coconut oil

Instructions

  1. CUT 400 GMS EGGPLANT INTO SMALL PIECES
  2. HEAT 2 TBSP OIL IN A PAN
  3. ADD 1/2 TSP MUSTARD SEEDS
  4. AS IT SPLUTTERS, ADD FEW CURRY LEAVES
  5. ADD THE EGGPLANT
  6. ADD SALT TO TASTE
  7. ADD 1 TSP RED CHILLI POWDER
  8. MIX WELL
  9. COVER & COOK FOR 10 MINS
  10. ADD 1/2 CUP GRATED COCONUT
  11. MIX & COOK FOR ANOTHER 5 MINS
  12. BAINGAN MASALA IS READY
