ABOUT Jain Disc Paratha Platter RECIPE

Something thats gives a different feeling is Innovation,so here I have for My Jain frends ,a Paranrha platter with no onion no garlic and yet looks and tastes great.Optional here is a red chilli garlic chutney to plate it wich is avoidable and can be replacex with green chutney or Ketchup top.the chana dal and lauki filling in the discs ,makes one feel having a styled meal at home

Ingredients Serving: 3

  1. 250 grams wheat flour
  2. 1 cup boiled mashed pumpkin
  3. 1 cup chana dal boiled with 4-6 pieces dhoodi/lauki
  4. 1 small tomato choppd fine
  5. 2tblspn oil
  6. 1 tspn red chilli powder
  7. 1 tspn zeera
  8. 1 tspn corriander powder
  9. 1/4th tspn haldi
  10. Salt to taste
  11. Curry leaves
  12. Some lemon ,green chillies carrots to garnish

Instructions

  1. 250 GRAMS WHEAT FLOUR1TSPN ZEERA,,SALT TO TASTE,1TSPN REDCHILLI POWDER,1TSPN CORRIANDER POWDER
  2. ADD 2 TBLSPN PUMPKINS PASTE
  3. MIX INTO CRUMBLE WELL,ADDING 2TBLSPN OIL,MIX THE CRUMBLE INTO DOUGH USING JUST EMUF WATER TO KNEAD
  4. KNEAD DOUGH MASSAGING WELL TRANSFER TO A SMALL BOWL
  5. COVER DOUGH WITH FOIL AND REST IN FRIDGE HALF HOUR
  6. ROLL NOW INTO SEMI THICK ROTI
  7. CUT OUT MINI PARATHAS OR DISC WITH GLASS OR SHARP CAP
  8. FINE OUT THE PARATHAS ,HEAT GRIDLE ,NON STICK TAVA AND PUT TO ROAST
  9. ADD ALL DISCS CUT OUT ON TO HOT TAVA,MAKE AS MANY BUT EVEN NO OF DISCS 1E 2,4,6,8
  10. GREASED TAVA ON NON GREASED BOTH FINE TO ROAST
  11. ROAST ON SLOW FLAME WELL TURNING SIDES
  12. TAKE OUT ALL MINI PARATHAS ROASTED IN A PLATE KEEP ASIDE
  13. ROAST BOIL CHANA DAAL AND DOODHI ON TAVA WITH SEASONING OF CHOICE AND CHOPPED TOMATOES
  14. START PLATING ADDING CUT LIME GREEN CHILLIES AND CARROTS AS ACCOMPIMENTS
  15. USE LEHSUN CHILLI CHUTNEY TO SPREAD ON SIDES TOO
  16. PLACE PARATHA DISCS AND ADD ON THEM THE CHANA DAL MIX
  17. CLOSE EACH WITH ANOTHER PARANTHA DISC TO FORM A SANDWICH
  18. FORM SANDWICHES OF THE DISCS AND PLACE
  19. DO ALL DISCS UP SIMILARLY
  20. THIS MAKES IT THREE PARATHAS
  21. THE PUMPKIN DISCS WITH BOIL CHANA DAL DOOHI MARE READY AND MAKE GREAT LUNCH
