Middle eastern style chicken kabob is the must thing to try once , healthy and easy to prepare.

Ingredients Serving: 2

  1. For chicken kabobs:
  2. Chicken boneless (preferably thigh pieces)
  3. Lemon juice 2 tablespoons
  4. Salt to taste
  5. Red chili powder 2 teaspoons
  6. Turmeric powder 2 teaspoons
  7. Cumin powder 2 teaspoons
  8. Chicken masala 1 tablespoons
  9. For rice platter:
  10. Basmati rice 2cups
  11. Salt to taste
  12. Oil 3tablespoons
  13. Paprika powder 1/2 teaspoons
  14. Olive oil or butter 2 tablespoons
  15. Cucumber 1/2 cup
  16. Tomatoes 1/2 cup
  17. Onion 2 tablespoons
  18. Coriander leaves
  19. Lemon juice 1 tablespoons
  20. Pita bread 1

Instructions

  1. Wash and clean chicken pieces ( should be big pieces) add lemon juice, turmeric, chilli powder, cumin powder, salt, and chicken masala mix well and marinate for atleast 3-4 hours,
  2. After 4 hours take a frying pan, I like to cook in a grilling pan , you can cook in an oven, electric tandoor or in an air fryer too. Add 3 tablespoons of oil add chicken pieces cook on a slow to medium flame until dark brown black spots appears on both sides.
  3. Rince basmati rice well to remove all the starch. Take a big vessel add 5 cups of water add 2 teaspoons of salt and boil for 5 mins..
  4. Add rice and keep the flame high cook for 7 min. then drain water and rince rice gently. This process will further removes remaining starch.
  5. Take a thick bottom pan add 1 tablespoons of olive oil or butter add rice and remaining oil or butter.
  6. Cover the pan with wet towel cook for 20 mins on a very slow flame.
  7. Cut cucumber, onion and tomatoes in a small pieces add lemon juice coriander leaves and salt mix well.
  8. To serve , take rice in a plate add chicken kabobs sprinkle some paprika add salad, serve hot with pita bread.
