Ingredients Serving: 3

  1. Mini Idlis 16
  2. Onion 1, sliced
  3. Green chilies 2, chopped
  4. Ginger small piece
  5. Carrot 1, chopped
  6. Beans 8, chopped
  7. Capsicum 1, chopped
  8. Cabbage 1/4, grated
  9. Peas 1/4 cup
  10. curry leaves 7-8
  11. Coriander leaves 3 tbsp chopped
  12. Idly chili powder 1 tbsp - adjust
  13. Salt to taste
  14. Turmeric 1/2 tsp
  15. Red chili powder 1/2 tsp
  16. For seasoning: 2 tsp oil
  17. Mustard seeds 1/2 tsp
  18. Jeera 1/2 tsp
  19. urad dal 1 tsp

Instructions

  1. HEAT OIL IN A PAN, SPLUTTER MUSTARD SEEDS. ADD URAD DAL, JEERA AND SAUTE UNTIL GOLDEN BROWN
  2. SAUTE ONION, GINGER AND GREEN CHILIES UNTIL ONIONS ARE TRANSLUCENT
  3. ADD VEGETABLES AND SAUTE FOR 2-3 MINUTES
  4. ADD TURMERIC, SALT AND RED CHILI POWDER. MIX WELL
  5. ADD CURRY AND CORIANDER LEAVES. MIX WELL
  6. ADD LITTLE WATER, MIX WELL . COVER AND COOK UNTIL VEGGIES ARE TENDER
  7. ADD IDLY CHILI POWDER AND MIX WELL
  8. ADD IDLIS AND GENTLY TOSS WITH MASALA. SERVE WARM WITH CUP OF COFFEE/TEA
