ABOUT Malabar Nei Choru / Ghee rice RECIPE

Malabar , is ever popular for its delicacies . This Nei Choru is a traditional delight of Malabari Muslim community. Any celebrations , weddings wouldn’t fail to have Nei Choru in their menu. This Nei Choru is so light on the stomach wanting to relish few extra morsels .

Ingredients Serving: 4

  1. Basmati rice 3 cups soaked for 15 minutes
  2. Ghee 3 tablespoons + 1/4 cup
  3. Green chillies 2
  4. Onions medium sized 3 thinly sliced
  5. Bay leaves 3
  6. Green cardamom 4
  7. Cinnamon stick large 1
  8. Cloves 4
  9. Cashew nut 3/4 cup
  10. Golden raisins 1/2 cup
  11. Salt 2.5 teaspoons or as preferred .
  12. Water 3 Cups
  13. Cilantros chopped for garnishing 2 tablespoons

Instructions

  1. Heat 3 tablespoons ghee in a pot .
  2. Fry 3 bay leaves,2 green chillies, Cinnamon large 1 stick , cashews , cloves 4.
  3. Add raisins fistful and 4 green cardamoms . Fry gently .
  4. Add 3 cups water to the pot . Allow the water to boil .
  5. When the water starts boiling ,
  6. Add 3 cups pre-soaked, drained basmati / kaima rice . Add sugar as required . Stir gently.
  7. Cover and cook . In another pan , heat 1/4 cup ghee , add 3 medium onions thinly sliced , salt.
  8. Fry till brown.While rice is cooking,add half of the fried onions +ghee and spread.
  9. Cover and cook for 10 minutes on medium heat . Add fistful cashews and extra raisins to the hot fried onions .
  10. Toss quickly in the heat . Keep aside . Rice is cooked with an amazing aroma .
  11. Add the reserved fried onions, fried cashews , raisins with ghee . Spread.
  12. Toss gently from up . Sprinkle chopped corianders.
  13. Malabar Nei Choru / Ghee rice is ready to serve . Serve hot with any spicy curries .
