Ingredients Serving: 4

  1. Mixed vegetables 500 gms(ashgourd,yam,drumstick,carrot beans,potato)
  2. fresh curd 1 cup
  3. grated coconut 2 tablespoons
  4. green chillies 4
  5. jeera 1 teaspoon
  6. salt 1 teaspoon
  7. turmeric powder 1/2 teaspoon
  8. coconut oil 1 tablespoon
  9. curry leaves few

Instructions

  1. CUT VEGETABLES-ASHGOURD,DRUMSTICK,YAM,CARROT,BEANS,POTATO ABOUT 500 GMS INTO THICK JULIENNES
  2. ADD THEM IN A PRESSURE COOKER
  3. ADD 1 TEASPOON OF SALT
  4. ADD 1/2 TEASPOON TUMERIC POWDER
  5. ADD 2 GREEN CHILLIES
  6. TOSS WELL
  7. ADD 50ML OF WATER
  8. PRESSURE COOK ON HIGH FLAME FOR 2 WHISTLES
  9. ADD 2 TBSP COCONUT,2 GREEN CHILLIES AND 1 TEASPOON JEERA IN A BLENDER AND GRIND TO A COARSE PASTE
  10. ADD THE GROUND PASTE TO THE COOKED VEGETABLES AND COOK FOR 2 MINUTES
  11. REMOVE FROM FLAME AND ADD 1 CUP FRESH CURD
  12. ADD FEW CURRY LEAVES
  13. ADD 1TABLESPOON OF COCONUT OIL
  14. MIX GENTLY WITHOUT BREAKING THE VEGETABLES
  15. MALABAR AVIAL IS READY FOR SERVING
