This one mughlai dish is prepared by marinating the mutton n cooked over dum gives a mouthwatering taste to it

Ingredients Serving: 4

  1. 1/2 kg mutton
  2. 1/2 kg basmati rice
  3. 2 boiled eggs
  4. 1 potato cut into cubes
  5. Salt to taste
  6. 3-4 tbsp oil
  7. 2 medium oinions sliced
  8. 2 tbsp ginger garlic paste
  9. 2 tbsp green chillies n coriander paste
  10. 1/2 tsp haldi
  11. 1 TBSP KASHMIRI RED CHILLI POWDER
  12. 1tbsp Coriander powder
  13. 1 1/2 tsp Garam Masala Powder
  14. 2 tbsp yogurt
  15. 1 tsp Kewra Water
  16. 1TBSP LEMON JUICE
  17. 1 tsp shahi zeera
  18. 1 inch cinnamon stick
  19. 2-3 green cardamom
  20. 3-4 peppercorns
  21. 3-4 cloves
  22. 1 bay leaf
  23. 1 1/2 litres(approx) water

Instructions

  1. FOR MARINATION
  2. In a bowl take mutton,add ginger garlic paste,green chilli coriander paste,haldi,kashmiri chilli powder,coriander powder,yogurt,lemon juice,garam masala n salt
  3. Mix well n marinate it for 30 min-1 hour
  4. Soak rice for about 20-25 min
  5. Heat oil in a pressure cooker n fry boiled eggs n potato cubes first,take them out n keep aside.Then add sliced onions n fry till golden brown
  6. Then add all whole garam masala n saute a lilttle
  7. Now add the marinated mutton n water.Cook until 4-5 whistles or until the mutton gets 80-85% tender
  8. Meanwhile boil water for cooking rice.Add salt to the water also
  9. Open the cooker n saute it for 4-5 min
  10. Cook the soaked rice till 75-80% cooked.Strain the rice when it is cooked
  11. Then in a big pot place mutton layer,place fried potato pieces, 2 boiled eggs n on it spread cooked rice.Pour kewra water n Orange colour over it.
  12. Let the biryani go over dum for atleast 15 min
  13. Garnish it with coriander leaves n the remaining boiled egg
  14. Serve hot with your raita

I am more fond of chicken biryani. So can I simply substitute mutton with chicken and follow these steps as they are?
