ABOUT Kolkata Style Chicken Biriyani RECIPE

This is the recipe of my mom. She is a excellent cook. Her kolkota style biriyani recipe is very popular to my family. I love this authentic kolkota style biriyani recipe very much.

Ingredients Serving: 3

  1. Chicken - 250gm
  2. Boiled Egg -2nos
  3. Basmati Rice - 500gm
  4. Onion Paste - 1cup
  5. Ginger & Garlic paste - 2tbsp
  6. Boiled Potato - 4nos
  7. Red Chili Powder 2tbsp
  8. Turmeric powder 1tbsp
  9. Cumin powder 1tbsp
  10. Coriander powder 1tbsp
  11. garam masala powder - 1tsp
  12. Biriyani Masala - 2tbsp
  13. Yougurt- 3/4 tbsp
  14. Black Pepper powder 1tbsp
  15. ghee - 2tbsp
  16. Yellow Food Colour - 2/3tbsp
  17. Beresta / Fried Onion - 2tbsp
  18. Rose Water- 1tbsp
  19. Kewra Water 1tbsp
  20. Meetha Aatter - 2drops
  21. Salt to taste
  22. Whole Garam Masala ( Cloves.Cinnamon ,green cardamom)

Instructions

  1. 1st marinate the chicken with a paste made with - onion, ginger& garlic Paste, chili, coriendar, cumin, black pepper, biriyani masala , garam masala powder, Yougurt, salt to taste and mixed with refined oil. Keep the Chicken overnight marination .
  2. Soak long grain rice in water for 30 mins.
  3. Take a tumbler, put water, add salt,whole garam masala , lemon juice & white oil. Once the water started boiling then add pre soaked rice in it & cooked the rice upto 70% . Then drain the water thoroughly & keep it for cooling.
  4. Take a food pan, put white oil for tempering, add whole peeled potato with salt & turmeri ,& keep it separately.
  5. Then boiled 2 eggs.
  6. Then in same kadai add little oil, add whole garam masala & add marinated chicken, cooked for 5 mins.Then add biriyani masala, chili powder, salt & stir it well for more 5mins.Then add water mix well and add kewra water, rose water & meetha aater. Cooked the Chicken till the entire water becomes dry.
  7. Next take a deep pan,brush the food pan with oil.
  8. Then put the half cooked chicken & create a layer, then add cooked rice , then again chicken, then rice, then add potatoes, boiled eggs, sprinkle little salt , black pepper, biriyani masala , black pepper powder & golden fried onion from top.Again sprinkle with kewra water, rose water & meetha aater.
  9. Put a lid from top feeled with atta dough.
  10. Put the biriyani pot on hot tawa or show flame & cooked for around 15 mins.
  11. Serve the hot biriyani with chilled cucumber raita.
