Once upon a time , Idlis gave me nightmares during my childhood . But never I knew I would long , cry , crave for idlis in my life . There came such a period , when I was pregnant , extremely nauseating , residing in a foreign land . What more to say ? I couldn’t withstand the smell of any food being cooked . Kitchen was the most hated spot of the house those times . My first pregnancy craving food was Idlis . My bad ! I neither could cook nor buy these valuable Idlis . The most healthiest Indian food for all the ages . Unbeatably , Idlis . Nothing else . For this contest , I wanted to try millet idli . So these are Pearl millet Idlis . Desi millet makes these desi Idlis super heathy . These Idlis goes well with an instant spicy red chilli dip . This dip is one traditional recipe which I learnt from my late grandmother . This spicy dip is my family ‘s favourite.

Ingredients Serving: 10

  1. Idli rice 1.5 cup
  2. Pearl millet / kambu 1.5 cup
  3. urad dal 1 cup
  4. Fenugreek seeds 1 tablespoon
  5. Salt as required
  6. Poha/ flattened rice 3/4 cup
  7. Water required to grind
  8. For red chilli - garlic dip :
  9. Red chilli powder 2 tablespoons
  10. Garlic cloves 5 finely crushed using mortar and pestle
  11. Salt 3/4 teaspoon
  12. Sesame Oil 4 tablespoons
  13. Hing a pinch .

Instructions

  1. For the pearl millet Idlis :
  2. Soak the measured pearl millet for 7 hours .
  3. Soak idli rice and fenugreek seeds separately for 7 hours .
  4. Soak urad dal for 2 hours in a separate container .
  5. Soak poha for last 40 minutes .
  6. Grind pearl millet and idli rice along with fenugreek seeds to a coarse batter .
  7. Grind urad dal into a smooth paste and add this to the ground millet batter .
  8. Finally add the ground poha .
  9. Mix all these into a single batter in a wide container
  10. Mix thoroughly using your hands for Better fermentation.
  11. Allow the batter to ferment overnight .
  12. Add salt to the fermented batter .
  13. Grease idli plates .
  14. Beat and pour the idli batter to the idli plates .
  15. Steam Idlis for 15 minutes .
  16. Hot hot spongy healthy Idlis are ready .
  17. For the red chilli garlic dip :
  18. In a bowl , take 2 tablespoons red chilli powder .
  19. Add pinch of hing .
  20. Add finely crushed 5 garlic cloves .
  21. Add salt .
  22. Add 5 tablespoons sesame oil .
  23. Mix all well into a thick dip consistency.
  24. Kambu Idlis are ready to be served with Andhra spicy red chilli garlic dip .
