ABOUT Mushroom do pyaza RECIPE

A delectable dish which is made with the goodness of onions and tomatoes. A double use of onions is done hence the name do pyaza. Adding of malai gives it a creamy texture and enhances it's taste and gives a beautiful color to the dish. One of the dish which i relish the most made by my mom with desi ingredients.

Ingredients Serving: 2

  1. Mushroom, 1 pack
  2. Onions, 3
  3. Tomatoes, 3
  4. Ginger, 1 inch, grated
  5. Garlic, 3-4 cloves, grated
  6. Dry fenugreek leaves, 1tsp
  7. Cumin seeds, 1/2tsp
  8. Bay leaf, 1
  9. Turmeric powder, pinch
  10. Red chilli powder, 1/2tsp
  11. Coriander powder, 1tsp
  12. Garam masala, 1/2tsp
  13. Oil, as required
  14. Fresh Malai or cream, 1/4cup
  15. Salt to taste
  16. Water, as per desired gravy consistency
  17. Coriander leaves, few chopped, for garnish

Instructions

  1. Take a pan and put mushrooms and add water and pinch salt and cook for 1 boil and simmer for 5 minutes.
  2. Drain the water and keep mushrooms aside.
  3. Chop 1 tomato and make puree of rest of them.
  4. Chop 1 onion and divide rest of the 2 onions into 4equal parts and then separate the layers.
  5. Take a non stick pan and add oil and then cook the onion layers until slight brown and keep aside.
  6. Add oil again to the pan and then put cumin seeds and bay leaf.
  7. When cumin seeds splutter add chopped onions and saute them.
  8. Add ginger and garlic and saute for 2 minutes.
  9. Now add the chopped tomato and the puree also and cook until it leaves oil.
  10. Add fenugreek leaves, red chilli powder, turmeric powder, coriander powder, garam masala, salt and mix well.
  11. Cook for 1-2 minutes.
  12. Now add in the sauteed onion layers, 1/2 cup water, mushrooms and cook for 2-3 minutes.
  13. Add in fresh malai and mix well and switch off the flame.
  14. Garnish with coriander leaves and serve hot.
