Again a typical Pakistani dish and they actually specializes in kadhai based non-veg dishes. It has a distinct flavour and taste. Best goes with wheat roti or phulkas.

Ingredients Serving: 4

  1. I kg of mutton cubes with bones.
  2. Ginger, garlic paste about 2 tablespoon each.
  3. Dry roasted cumin powder - 1 tsp
  4. coriander powder - 1 tsp
  5. Fennel seeds powder - 1/2 tsp
  6. Kashmiri red chilli powder - 1 tsp
  7. normal red chilli powder - 1/2 tsp
  8. Kasuri methi or dry fenugreek leaves - 1 tbsp
  9. Cumin seeds - 1 tsp
  10. Bay leaf - 1
  11. Whole Garam Masala and powder - 2 tsp
  12. Ginger julienne and chopped green chilli for garnishing.
  13. Lemon juice - 1 tbsp
  14. Mint leaves are optional

Instructions

  1. Take big wok and heat oil and 1 tablespoon of ghee.
  2. Add whole garam Masala and wait until the flavour comes up. Then put bay leaf and cumin seeds.
  3. Then add the fine chopped onions and fry them until they are translucent.
  4. Then put the ginger garlic paste and saute for some time.
  5. To it add the powder spices and fry them in flow heat until the oil comes up.
  6. Then add the mutton and saute for 15 mins in equal intervals. Then pour 1 cup of water to it and cover the lid.
  7. It can be pressure cooked too or can be done in a low flame till the mutton is tender.
  8. Add kasuri methi and garam Masala powder to it.
  9. Put 1 teaspoon of lemon juice from top.
  10. Add chopped green chilli and ginger for garnishing after you plate it.
