ABOUT Dal Sultani : Nawabi Creamy Lentil RECIPE

A very famous recipe from my mom's kitchen. Though there are numerous recipes that my mom makes and are my favorite. But this one tops the list. It is a shahi dal that Mughals used to make.

Ingredients Serving: 2

  1. 1 cup arhar / tuvar dal
  2. 2 cups water
  3. Salt (to taste)
  4. 1 teaspoon red chilli powder
  5. 1 cup curd
  6. 1 cup milk
  7. 1/2 cup malai (milk cream)
  8. 10 cloves
  9. 1 black cardamom
  10. Coal piece
  11. 1 tablespoon ghee
  12. For tadka :
  13. 1 tablespoon ghee
  14. 1 teaspoon cumin seeds
  15. 3-4 cloves garlic (chopped)
  16. 1/2 teaspoon red chilli powder
  17. For garnishing :
  18. 1 green chilli (sliced)

Instructions

  1. Wash the dal and add it in pressure cooker with water, salt and red chilli powder.
  2. Cook for around 3-4 whistles.
  3. Take a bowl. Add milk, curd and cream. Whisk well.
  4. Dry roast cloves and black cardamom. Grind it to fine powder after roasting them.
  5. Mash the dal with the back of ladle. Add to it the curd cream mix and roasted powder.
  6. Heat a coal piece. Put it in bowl. Add one tablespoon ghee over the heated coal piece and put it in dal. Cook covered on sim for 10 minutes.
  7. For tadka, heat pan. Add ghee. Add cumin seeds, garlic and red chilli powder.
  8. Pour the tadka over daal. Garnish with green chillies.
