ABOUT Parwal Kalimiri RECIPE

Parwal cooked tenderly with garlic and black pepper. A spicy vegetarian dish from Madhya Pradesh straight from my Mom-in-laws kitchen.

Ingredients Serving: 2

  1. Parwal 300 gms
  2. Garlic 6-8 cloves
  3. Cumin seeds 1 tsp
  4. Green chillies 2 -3
  5. Dried red chillies 2
  6. Black pepper corns 2 tsp
  7. black pepper powder 1 tsp
  8. Turmeric powder 1/2 tsp
  9. Salt
  10. oil

Instructions

  1. Remove the outer skin of the parwal with a knife and cut it into 4. Make sure not to remove the skin.
  2. Put in garlic, cumin seeds, green chillies, dried red chillies, black pepper corns and some water in a grinder to make a paste.
  3. Heat oil in a pan. Put parwal in it and saute till they are tender and the colour changes to golden brown in a medium flame. Once done remove it from the pan.
  4. Heat oil again in the same pan. Put the paste in it and fry till the raw smell goes away. Now put the parwal in it.
  5. Add turmeric powder and salt. Drizzle water in between if required. Cook it on a medium flame for the next 10 mins or till the parwals are cooked.
  6. Put in black pepper powder and cook for 2-3 mins.
  7. Serve it hot with rotis.
