ABOUT Mutton Yakhni RECIPE

Mutton yakhni is a signature dish of kashmir. Mutton is cooked with spices and yoghurt during the winter and this dish is served in marriages

Ingredients Serving: 4

  1. Mutton with bones 1/2 kg
  2. Yoghurt/curd 2 cups
  3. Fennel seeds powder 2 tablespoons
  4. Dry ginger powder 1 tablespoon
  5. Cinnamon 2 sticks
  6. Cloves 5
  7. Green cardamom 2
  8. black cardamom 2
  9. Bay leaves 2
  10. Shahjeera 1 teaspoon
  11. Salt accordingly
  12. mustard oil 50 ml

Instructions

  1. In a pressure cooker add 2 tablespoons of mustard oil and heat till smoking point.
  2. Then add mutton and whole spices except shahjeera and cloves.
  3. Saute the mutton till the water dries up
  4. Then add 1 cup water, salt,fennel seeds powder and dry ginger powder and stir well
  5. Pressure cook for 8 whistles.
  6. In another kadai heat the remaining oil till smoking point and remove from heat.
  7. Then add the cloves and shahjeera.
  8. Bead the curd well and add to the kadai
  9. Stir well in medium flame continuously to avoid curdling.
  10. When the curd mixture starts to boil add it to the cooked mutton.
  11. Simmer it till oil starts floating
  12. Serve it with hot steamed rice
