Ingredients Serving: 5

  1. For the wrap:
  2. 1 cup Maida
  3. 1/2 cup Corn flour (Makkai ka Atta)
  4. 1/4 cup Atta
  5. 1 tbsp Oil
  6. Salt as per taste
  7. For stuffing:
  8. 8 garlic pods
  9. 1 cup corriander leaves
  10. 6 green chilles
  11. 1 tsp thyme
  12. 1 tsp tarragon
  13. 1 tsp red chilli flakes
  14. 4 tbsp thick yogurt
  15. 2 to 4 tbsp maida
  16. Bread crumbs 1 cup
  17. Salt as per taste
  18. 2 big Onion
  19. 2 big Capsicum
  20. Few Lettuce leaves
  21. For Red chutney:
  22. 40 Red chillies whole
  23. 20 Garlic pods
  24. 1/2 cup Spring onion leaves
  25. 1 tbsp Vinegar 
  26. Salt as per taste

Instructions

  1. To Make Wrap: Mix all ingredients and make a medium stiff dough and roll big rotis and just cook on tawa slightly and cover all wrap in a cloth and keep it soft.
  2. To Prepare Paneer: Cut in medium size cubes and keep aside. Grind the coriander, garlic, green chillies and take out in a bowl put all other ingredients including yogurt except maida then marinate the paneer in mixture. Keep in freezer for 1 hour till the mixture is firmly stuck on paneer.
  3. Make a maida liquid paste, not thick nor thin but medium in consistency. Add salt in it. In another plate take bread crumbs put chilli flakes, salt and oregano. Take out paneer from the freezer and dip in maida batter then dip in bread crumbs and freeze for 4 hours or overnight then take out and shallow fry. Keep aside.
  4. Now cut onions and capcicum, put salt and chat masala in it and mix well. Now take one wrap put a lettuce leaf, put onions and capsicum followed by paneer 2-3 pieces per roll. Wrap them tightly and grill it in an oven or on a hot tawa. Serve hot with spicy chutney.
  5. To Prepare Chutney: Take a little water, boil the chillies and then drain the chillies from water. Grind along with garlic and then put in it finely chopped spring onion leaves, salt, vinegar and store in an air tight container. Keep in fridge.
