ABOUT Kaddu (Lauki) Ki Sabzi Doodh Ke Sath RECIPE

Bottle gourd is a vegetable high on water and is a rich source of vitamin C, K and calcium. It helps in maintaining a healthy heart and brings down bad cholesterol levels. The juice is also beneficial for diabetic patients as it stabilize the blood sugar level and maintains blood pressure. Milk or Doodh an important source of protein, since each glass contains almost 8 grams. This recipe I learnt from my office colleague Ms Arunima Puranam

Ingredients Serving: 10

  1. Finely Chopped Bottle Gourd (Lauki/Kaddu) - 500 Grams
  2. Milk (Doodh) - 1 Cup
  3. Roasted Sesame Powder (Bhuni Til Ka Powder) - 1 Table Spoon
  4. Roasted Peanut Powder (Bhuni Mungphali Powder) - 1 Table Spoon
  5. Cumin & Mustard Seeds (Jeera Rai) - 1 Tea Spoon
  6. Finely Chopped Curry Leaves (Barik Kata Curry Patta) - 1 Table Spoon
  7. Finely Chopped Green Coriander (Barik Kata Hara Dhaniya) - 1 Bunch
  8. Ginger Garlic Paste (Adrak Lasoon Ka Paste) - 1 Table Spoon
  9. Slit Green Chillies (Kati Hari Mirch) - 3 to 4
  10. Red Chilli Powder (Lal Mirch Powder) - 1 Table Spoon
  11. Turmeric Powder (Haldi Powder) - 1 Tea Spoon
  12. Cumin Powder (Jeera Powder) - 1 Tea Spoon
  13. Coriander Powder (Dhaniya Powder) - 1 Table Spoon
  14. Whole Spice Powder (Garam Masala Powder) - 1 Tea Spoon
  15. Salt According to taste
  16. Oil - As per your requirement

Instructions

  1. Heat oil in a non-stick pan or kadai. Once the oil is hot add cumin & mustard seeds and finely chopped curry leave. Allow them to crackle in order to get the flavors in the oil
  2. Add ginger garlic paste and cook till the water from the paste completely get dried
  3. Now add finely cut bottle guard and mix well. Cover it and cook for 3 to 4 minutes.
  4. At this stage add all dry ingredients - red chilli, turmeric, cumin, coriander and whole spice powder. Season it with salt as according to taste. Mix all the ingredients and cook till the oil get separated from the masala
  5. Add the roasted sesame and peanut powder. Mix well and cook till the oil get separated from it
  6. Now add milk and mix well. Cook it on low flame till get absorbed and bottle gourd is completely cooked.
  7. Finally add finely chopped green coriander and slit green chillies. Mix all and cook for another 2 minutes
  8. The dish is ready to be served with any Indian bread or Steam Rice
