ABOUT Amiri Khaman RECIPE

Amiri khaman also known as Sev Khamani is a classic Gujarati snack. Here the leftover or fresh dhoklas are crumbled, tempered and flavours of pomegranate kernels and nylon sev are added to get this delicious snack.

Ingredients Serving: 4

  1. For Dhokla batter : Dry ingredients:-
  2. Besan (gramflour) : 1/2 cup
  3. Grated ginger : 1 tsp
  4. Salt : 1/4 tsp
  5. Powdered sugar : 1 tsp
  6. Eno fruit salt : 1 sachet
  7. Wet ingredients:
  8. Curd : 1/4 cup
  9. Limejuice : 1 tsp
  10. Oil : 1 tbsp
  11. Water : 1/4 cup or little less
  12. For Tempering:
  13. Oil : 1 tbsp
  14. Mustard seeds : 1/2 tsp
  15. Green chillies : 2 -3
  16. Curry leaves : 8-10
  17. Other Ingredients:
  18. Pomegranate kernels : 2 tbsp
  19. Dessicated coconut : 1 tbsp
  20. Nylon sev : 1 tbsp
  21. Salt : 1/4 tsp
  22. Sugar powder : 1tsp
  23. Limejuice:1tsp

Instructions

  1. In a bowl, mix together all the dry ingredients except Eno.
  2. Take another bowl and mix the wet ingredients. Now combine the two and mix well to form a smooth batter of pouring consistency.
  3. Grease a microwave proof bowl and keep ready.
  4. Now add eno in the batter and give it a quick stir, then transfer it immediately to the greased bowl. Cook it on microwave high for 4-5 minutes.
  5. Take it out and let it cool completely.
  6. In mean while you can prepare the tempering. Heat oil and add mustard seeds to it. Add in curry leaves and slit green chillies.
  7. Now demould the dhokla and crumble it in a bowl. Add pomegranate kernels and coconut and toss.
  8. Now pour the tempering over it and toss again. Your Amiri khaman is ready to enjoy.
  9. Transfer to the serving bowls and garnish with a layer of nylon sev .
