Ingredients Serving: 6

  1. 1 kg chicken legs/ whole chicken pieces
  2. For marination:
  3. 250 gm shallots
  4. 4 stalks of lemon grass
  5. Handful of Curry leaves
  6. 5-6 chilli padis
  7. 5 garlic cloves
  8. 2 inch ginger deskined
  9. 2 Eggs
  10. 1 tablespoon turmeric powder
  11. 1 tablespoon coriander powder
  12. 1/2 tablespoon red chilli powder
  13. 1 tablespoon curry powder
  14. 5 tablespoon cornflour
  15. Oil for Deep frying

Instructions

  1. Wash and clean the chicken pieces well and place them in a bowl
  2. Roughly chop the shallots, lemon grass,chilli padis,garlic and ginger
  3. Add the chopped ingredients in a blender and blend into a paste without any water
  4. Add the blended paste to the chicken
  5. Add the dry spices next
  6. Beat the eggs and add them next. coat the chicken pieces well with the paste,eggs and spices
  7. Finally add the salt, curry leaves and cornflour and coat every chicken piece well
  8. Cover and refrigerate for an hour for the chicken to marinate in the flavours
  9. Heat enough oil for deep frying and fry the chicken pieces in batches until both sides are crisp and brown
  10. Rest the fried chicken on an absorbent paper to drain excess oil
  11. Serve hot with chilled yogurt-mint dip. Enjoy!!
