Ingredients Serving: 7

  1. For dough
  2. 3 cups all purpose flour
  3. 1 tsp salt
  4. 1 cup warm milk
  5. 1 tbsp melted butter
  6. 1 egg
  7. 1/2 tbsp sugar
  8. 1/2tbsp active drt yeast
  9. 1 egg yolk for egg wash
  10. For filling
  11. 1 tbsp butter
  12. 1/4 cup chopped green garlic
  13. 1/2 cup chopped onion
  14. 1 cup sliced mushroom
  15. 150gms lamb mince
  16. Chopped coriander
  17. Few sprigs of chopped mint leaves
  18. Salt
  19. 1tsp paprika powder
  20. 1/2tsp cumin powder
  21. 1/2tsp all spice powder

Instructions

  1. To activate the yeast
  2. In a bowl take 1/4 cup of milk and stir in sugar
  3. Now sprinkle yeast and set aside for 10 minutes to bloom
  4. In a large bowl put rest of the milk, melted butter, egg and salt
  5. Give it a stir
  6. Now add the activated yeast and 1 cup flour
  7. Mix with the help of spatula and add in rest of the flour
  8. Knead the dough for 3-4 minutes and cover it with a damp cloth.
  9. Keep it in a warm place for 1 1/2 hour to proof.
  10. Meanwhile prepare the stuffing.
  11. For filling :-
  12. In a pan put butter and add garlic to it.
  13. Saute for a minute
  14. Now add onion and cook till translucent.
  15. Simmer the flame and add lamb mince to it
  16. Sprinkle salt and stir frequently until the lamb is cooked about 15 minutes
  17. Now add mushrooms,mint leaves, coriander and rest of the spices.
  18. Keep the flame high and stir continuously until the filling gets dry
  19. Shift in a plate to cool
  20. Take the proofed dough and roll it into a log
  21. Now cut it into 7 equal portions
  22. Press each portion into a ball and roll it in a circle on clean surface by dusting some flour
  23. Place 2-3 tbsp of filling in the centre.
  24. Now lift either sides of the stuffing and pinch it together so that the stuffing doesn't come out.
  25. Place the prepared Pirozhki on a greased tray keeping the pinched side down.
  26. Repeat the process with rest of the dough and filling.
  27. Cover again with a damp cloth and let it proof for another 15 minutes.
  28. Give them an egg wash
  29. Bake in a preheated oven at 200℃ for 25 minutes or until the surface turns golden.
  30. Enjoy hot.
