Ingredients Serving: 3

  1. Brinjal 1 big. ( 350 grams)
  2. Onions 3 chopped
  3. Spring onions and fresh garlic minced together 3 tbsp
  4. Ginger grated 1 tbsp
  5. Coriander powder 2 5sp
  6. Garam masala 1 tsp
  7. Chilli powder 1 tsp
  8. Salt to taste
  9. Oil 2 tbsp
  10. Tomatoes 2 chopped fine.
  11. Groundnuts roasted , peeld and coarse ground 3 tsp
  12. Fresh cream / malai 2 tbsp
  13. Coriander leaves chopped 2 tbsp

Instructions

  1. Grease brinjal with oil and roast on stove top on medium heat.
  2. Turn occasionally to roast it evenly from all sides.
  3. After roasted, and let it cool.
  4. Peel out the skin and keep aside.
  5. Heat oil in a pan. Add chopped onions.
  6. Saute on medium heat.
  7. Add ginger , minced Spring onion and fresh garlic.
  8. Saute , add coriander powder, chilli powder, Turmeric. Salt.
  9. Add garam masala.
  10. Fry for 3 to 4 minutes.
  11. Add chopped tomatoes. Saute till they mixed well.
  12. Mash the brinjals and add.
  13. Cook for sometime. Check the salt and masala.
  14. Now add groundnuts and mix.
  15. Add fresh cream. Mix and serve with garnish of coriander leaves.
